Simplot Simple Goodness™: Mango Cubes 2/5lb 20 oz.
Simplot Good Grains™: Red Quinoa 6/2.5lb 40 oz. 1 bag
Poke, prepared 40 oz.
Spring mix lettuce 20 oz.
Thai sweet chili dressing, prepared 40 fl. oz.
Disposable clear cups with lids, 18-20 oz. 20 each
Disposable 2 oz. lidded portion cups 20 each
Preparation Instructions:
Step 1
Thaw edamame and mango according to package instructions. Keep separate and chill.
Step 2
Prepare red quinoa according to package instructions. Chill.
Step 3
Gently fold the poke and mango together. Hold chilled.
Step 4
For each portion; in a clear cup layer: 3 oz. poke-mango mixture, 2 oz. shelled edamame, and 2 oz. quinoa. Finish with 1 oz. spring mix. Cover with lid. Serve with 2 fl. oz. dressing in a lidded portion cup.
